Campfire Spaghetti Squash with Chicken or Chicken Substitute

Everything seems to taste better outside and spaghetti squash is no exception!  The following recipe details the steps needed to procure this scrumptious dish, both vegetarian and non-vegetarian versions.  Levi, of course, was the Chef Extraordinaire behind the creation! This recipe can feed up to four.

Ingredients:
  • 1 spaghetti squash (yellow oval shaped)
  • spaghetti sauce (your choice on the type)
  • olive oil
  • garlic power or chopped garlic
  • salt and pepper
  • chicken (2 boneless, skinless breasts) or chicken substitute (2-3 Quorn breaded Chick’n Patties)
Utensils and cookware to have on hand:
  • knife
  • fork
  • tongs
  • basting brush
  • bowl
  • sauce pan
  • cutting board
  • grill/fire pit
  • wood/lighter
What to do:

1. Light your campfire and let it burn down for a bit to get coals started.
2. Cut the squash in half, longways, and cut the seeds out of the squash.
3. Brush the inside of the squash with olive oil, liberally.
4. Sprinkle garlic powder or chopped garlic on the inside of the squash.
5. Add salt and pepper to taste.
6. Salt and pepper the chicken and place it on the grill. (We did not season the substitute chicken patties, only heated them.)
7. Place the squash cut side up on the grill.

8. Cook the chicken until done.
9. Cook the squash for about 25-30 minutes.
10 Turn it over and cook for an additional 5-10 minutes.
11. Use a fork to peel the flesh into strings, then scoop out with tongs.

12. Top squash with cut chicken breast (chopped substitute chicken) and heated sauce. *Spaghetti sauce was heated over fire in sauce pan.
13. Enjoy!
